Eat More Vegetables and Fruits

Sara over at MyFrugalFunLife.com mentioned that 100 Days of Real Food is having some mini "real food" pledges over the next few weeks.

This first week, the challenge was to eat 2 different fruits or vegetables. No problem, I thought to myself...then I continued to read....with every meal. YIKES!

I don't usually eat traditional foods for breakfast so it makes it a bit easier. Eating cereal with carrots and celery would be a bit strange. I've been doing pretty good so far, even though as I write this, I've only had 4 meals LOL.

So far my vegies/fruits have been:
Breakfast: smoothie with spinach and strawberries
Lunch: brussel sprouts and avocado
Dinner: salsa and avocado
Dessert: brussel sprouts (when I eat sweets I am absolutely starving later in the day...I don't normally eat brussel sprouts for a treat)

Breakfast: smoothie with spinach, strawberries and a 1/2 of a banana.

You can ignore the snickers bar ice cream that I had at a birthday party. I'm sure it's not relevant.

Anyone else doing the challenge?

  1. I thought it would be a breeze, but it's actually been pretty challenging to fit in two at each meal. Breakfast is my bad area-a lot of times I skip it all together, or just have some string cheese. The kids have done better-my mother in law gave me a bunch of apples so I've been slicing those up, and then adding blueberries or strawberries to their yogurt (or just offering them in a bowl).
    Lunches and suppers have been much easier to fit them in.
    And my husband-eh we're not counting him in most of these challenges lol!

  3. I would love to know how you prepare your brussel sprouts - I'm having a hard time finding a way that I like

  4. I'm not counting my husband either! I am not even counting the kids at this point - it's hard enough for me to do it.

    Anon - I put frozen brussel sprouts in a 425 degree oven with a bit of olive oil or bacon grease. Sprinkle with salt.

    I'm not sure how long they take....I stir them every 10 minutes or so. I think I've been overcooking them because this last time they were wonderful! I think I cooked them 25-30 minutes total?

    After I take them out I put a significant amount of butter on them.

    I've never liked brussel sprouts until I started playing with roasting them.
