Feed Your Freezer Day / Menu Plan Monday


I've actually been "doing" my list of things that I had planned! It certainly makes a big difference.

Here's my menu plan and how I'm going to feed my freezer:
  • Monday
    • Breakfast - leftover Taco Omelet Bake
    • Lunch - roast beef sandwich or wrap
    • Dinner - Pasta-less Carbonara (if it's a good recipe, I'll share! It's basically the carbonara recipe with a lot of veggies and meats instead of pasta) carrots and green beans on the side
    • To Do's:
      • Fry 1 pound hamburger (1 small hamburger, some for carbonara, some for jambalaya)
      • Fry 1 pound sausage ( 1/2 carbonara 1/2 jambalaya)
      • Saute asparagus for carbonara
      • Saute green beans in bacon grease as a side dish
      • Chop onions and garlic for the week
      • in AM make sauce -  when home from volleyball game, warm up sauce and add veggies
      • Make peanut butter oatmeal for Tues AM
      • Make yogurt
      • Bake whole chicken in crock pot for 4 hours then make soup with bones
      • cut up veggies for salad
      • Bread???
      • Make taco seasoning
  • Tuesday
    • Breakfast - PB Oatmeal - small burger for my son who doesn't like peanut butter 
    • Lunch - chicken salad with cucumbers, celery, carrots.
    • Dinner - Leftover roast beef (from Sunday's meal) over salad and peas. May season the beef with chili powder and serve with salsa...
    • No To Do's - I'm at a cross country meet
  • Wednesday
    • Breakfast - sausage and fruit smoothie (sneak in spinach - you really cannot taste it or see it!)
    • Lunch kids - hot lunch
    • Dinner - Zuppa Toscana Soup (Olive garden recipe) with carrots
    • To Do's:
      • Thaw 1 pound of burger
      • Make yogurt fruit rollups in dehydrator.
      • Bread????
  • Thursday
    • Breakfast - bacon and blueberries (from the freezer)
    • Lunch - ham sandwich
    • Dinner - Mary's Jambalaya (need to put the recipe on my blog this week) salad or green beans
    • To Do: make meatballs
  • Friday
    • Breakfast - ???
    • Lunch - tacos???
    • Dinner: BBQ meatballs with sweet potato fries and sauteed broccoli
  • Saturday and Sunday ??? who knows!!!

For lunch, I eat whatever I can find in the fridge. When lunch is listed it's to pack in my kids' lunch bag for school. I'm still trying to avoid most breads and wraps, but lunch is a challenge. My husband usually gets lunch provided to him at work. If he doesn't he'll take whatever leftovers he can find.

I really want to get back into OAMC (once a month cooking) but I haven't had time to look at it lately. My favorite part about OAMC is the time I get to dedicate in the kitchen without worrying about anything else. Monday morning I am going to the store then I'll start working on this list. Ideally I'd be able to do my list on Tuesday, but this week that won't work out.

If I'm smart then in 4-6 weeks I'll re-use this menu so all of my hard work doesn't go to waste. I haven't been so smart lately though so we'll see!!!

  2. I have wanted to try OAMC too...though I'm not sure that I'm quite ready for it!! Looks like you've got a great menu going.
