Recipe - Homemade Sausage


Update 12/31/10: Here's the new recipe I'm playing with:

2lbs ground pork

1 teaspoon ginger
1 teaspoon nutmeg (I'm using 1/2 t.)
1 teaspoon coriander(I didn't have any so I just left it out)
2 teaspoons sage
1 teaspoon thyme
1 teaspoon pepper
3 teaspoons salt
5-10 drops hot pepper sauce

A while ago I was browsing allrecipes and found that you could make your own sausage. I was completely floored. Seriously. I probably shouldn't admit that, but I couldn't even imagine why people would attempt this. Then I had an "aha" moment. I like sausage, but it's way too fatty for me to eat in the morning.

Lately I seem to need a lot more protein during the day, but that is a whole different story. Anyway, I decided to try this with hamburger. What do you know? It tastes like sausage!

I usually buy 80% lean hamburger when I plan to use the beef in something. This way I can fry it/boil it and drain off a lot of the grease. When we BBQ hamburgers or make meatballs I use 90% lean burger. Unfortunately when I attempted my sausage we only had 80% on hand. Of course I could have gone to the store and paid full price for 90% lean, but that would be silly. 80% has a TON of fat in it though. Yuck! I don't usually see it because I rinse it after frying/boiling it.

Anyway, let the testing begin. I had 2 pounds of burger and 2 recipes to try. One recipe called for 2 t of salt and a bunch of spices. The other recipe didn't call for as much salt or spices. The winner? Less salt/fewer spices. This will be a piece of cake! Now, I didn't get all fancy and make links. I don't even like sausage in links. I made patties and fried them up. Have I mentioned how much grease? Oh yes, I have. I ended up combining the two recipes. I'll probably need to tweak a bit more before I perfect these babies.

1 lb beef (90% or better)
1 egg
1/2 t salt
1/4 t pepper
1/8 red pepper (I'm going to try 1/4 t next time)
1 t cumin
1/2 t Italian Seasoning
1/2 t garlic powder
1/4 t onion powder

Mix all together, make sausage patties and fry them up!

My other recipe called for 1/4 t nutmeg and ginger. I might add those one of these days. Since there are a lot of spices in this recipe, I'm going to do what I did for my sticky chicken recipe. Multiply the spices in this recipe times 4 and then scoop some of the "pre-mixed" spices into the burger and egg. I will save a lot of time doing it this way!

My little grocery store that has wonderful sausage (with MSG) charges about $4.00/pound. I can make this for $2.00/pound...definitely a frugal recipe!

    Definitely big savings and healthier. We're in the market for a meat grinder so we can grind our own meat. We make our sausage from ground pork and dh loves it. I'm still tweaking it though so I might try this one out. Thanks for sharing it.

  3. We use one from recipezaar. It doesn't have egg, cumin, or garlic. I love sage in sausage so I found one on the Zaar that calls for it. I usually add a little extra though.
    I found a few videos on youtube that were interesting on sausage making which led me to a site called thespicysausage.com. It looks interesting.

  4. There are some great sausage recipes out there! We raise our own beef and pork, and make our own sausages too :) Experimenting is great, you'll come up with something fabulous I'm sure!

    A few things we like - add a bit of brown sugar to 'mellow' spicier seasonings; use coarse sea salt rather than regular salt (better flavor), and mix it up the night before to let the flavors meld before cooking.

  8. Sounds delicious. I love cooking with ground beef - it's so versatile! This sounds a lot like my hamburger recipe, except I grill mine in the oven instead of frying it. I wish I had a broiler - that would be sweet.
